The artificial taste assessment can be a very challenging task when the substances responsible for the taste have different chemical structure.
To evaluate bitterness of NCE, we generate quantitative prediction of bitterness scores (calibration) of diverse APIs, both inorganic and organic, on the basis of a multivariate calibration based on known (Human) H Scores. Influence of the lipophilicity of the substances on the sensor response may be especially important for the measurements of bitterness intensity as hydrophobicity was reported to be correlated with bitterness intensity.
