República del Cacao was born with purpose of rescuing and developing the production of “Cacao Arriba”, a native Fine Aroma Cocoa variety from Ecuador and one of the most valued kinds of cocoa in the world, due to its unique taste and aroma, especially in chocolate production.
The focus of our commitment with native Fine Aroma Cocoa in Latin America extends towards the search, of new, and sometimes forgotten, varieties from the Andes, the high Amazon basin, Central America and the Caribbean.
Our work in the region has started to give results that have exceeded our expectations and can be seen, and tasted, in our professional chocolate portfolio from Ecuador, Colombia, Peru and the Dominican Republic. And as we go forth, we keep searching.
The unique origin of the Fine Aroma Cocoa that we work with is due to the effort of the small farmers that throughout Latin America, protect ancient native varieties of cocoa, from one generation to the next; caring and passing down its customs and traditions.
